That part is a bit trickier. You have 2 options:

1) You can use a mailing service such as MailChimp.com and they will let you know those kind of statistics.

2) You can use html code in your e-mail and include an image that is stored in your domain. Depending on your hosting provider, you should be able to access a report indicating how many times that image was accessed in a period of time (week, time). I would suggest that you include an unique image per e-mail campaign so that it is easier to track which image belongs to what e-mail.

1) Web Analytics: An Hour a Day by Avinash Kaushik:http://www.webanalyticshour.com/ This is a great resource that you can refer to over and over again.  Avinash has a great blog at http://www.kaushik.net/avinash/.  Check it out for for a throughrough discussion of several topics.

2) Advanced Web Metrics with Google Analytics by Brian Clifton: http://www.advanced-web-metrics.com/blog/.  This is a more technical book, however it provides great little details about specific task on Google Analytics.

I would start with these two for now. There is a lot of information to be covered with these two authors.
